2 roasted red peppers from a jar
1 x 360g can artichoke hearts (240g drained)
2 tsp dried thyme
1/2 tsp oregano
1/8 tsp garlic powder
2 tsp dijon mustard
juice of a lemon
2 tbsp red wine vinegar
2 tbsp extra virgin olive oil
freshly cracked pepper

have a wonderful trip. I love tuna fish salad with mayo, and hard boiled egg, onion, celery, and the best green mango relish in the world. fab. fresh dill if you have it is really good too.

thank you whoever you are. hardboiled egg(s) is/are indeed the perfect addition to tuna salad, but they require an amount of advance planning that doesn't really work out for me. green mango relish sounds supersmart though and i will totally be checking that out.
