primary colors.

This is to hpu, yes, which is not a ty po, Terrill Soules wherever you are. It's also called Burmese tofu or tohu thoke or Shan tofu, but while room temperature to hpu is certainly a super interesting substance, like a cross between polenta and a Spanish tortilla, it's absolutely nothing like tofu.

This is the recipe I used to get where I am so far, which I trusted because it's suspiciously identical to the Dutch one from Anna Jones' cookbook that I tried to use, but, like so much of the cooking I'm doing lately, the process is so unfamiliar (for me) that I had to find an English version to be certain that these were really the steps.

Anyway. More when I figure out what to do with it. Guess something like this is one option, or this...but maybe the first thing to do is try the New York Times' recipe for tohu thoke.

In other news, found a pretty good thing to do with discarded, unloved mandarin oranges: basically oranges, vinegar, sugar, a big pile of ginger, dates, walnuts, cloves, cumin, and a few other things, cooked for a long time.

la golgappa.

The loteria cards are because I'm imagining the design for an imaginary tamale stand's menu. The golgappa/panipuri recipes that follow will be because I'm imagining the menu design for an imaginary panipuri stand, maybe one that looka lika these-a.

Pani, puri, potatoes, tamarind chutney, red onion.

+++

date-tamarind chutney.

1 cup Moroccan date paste (my estimate of the equivalent of 10 dates)
4 tbsp tamarind concentrate
1/2 cup jaggery or brown sugar
2 cups water
1 tsp toasted cumin
1 tsp cayenne
pinch asafetida
pinch black pepper
salt to taste

+++

pani.

6-7 cups cold water
1 cup packed mint leaves
1 green chile
1 small piece ginger
1 tbsp amchoor
1/2 tsp chaat masala
1/4 tsp cumin powder
pinch of black salt (optional)
fresh coriander leaves for garnish
salt to taste
some quantity of sugar?

Make a paste of mint, chile, ginger. Add water and everything else. Salt to taste. Refrigerate.

seemple pleasures.

This is tomorrow.
This is dessert:

+++

goat yoghurt, date syrup, cherries or some other fruit, pine nuts or some other nut.

Haven't tried this exact combination, but so far we have tried bananas and strawberries, both good, and I've tried pine nuts, walnuts, and almonds, all good. It's pretty infallible, and the first two ingredients add instant and delicious exoticism to whatever fruit and nut you use.
